Dining at Minerva Retirement Home

We take our dining room services seriously. We realize that the dining experience is important both nutritionally as well as socially so we make every effort to make meal time a delight and an experience also goes beyond what ends up on the plate.

Full breakfast, lunch, and dinner are included in your monthly fee. We also have special "theme" nights in the dining room as well as special menus for holidays, social events, Birthdays and more!

Our menus are formulate and customize to the dietary plans for each resident by a          Certified   nutritionist.

Regular Meal Plan:
Breakfast: Assorted juices (4oz), french toast or pancakes (2), syrup, DB: sugar free syrup, margarine (1t), milk (8oz).

Lunch: Lean ground beef (4oz), white rice (1/2 cup), beans (1/2 cup), plantains (1/2 cup), mixed salad (1 cup), salad dressing (1 tbsp), fruit cocktail (1/2 cup).

Snack: Apple Sauce (1/2 cup).

Dinner: Soup of the day (8oz), chicken salad sandwich (3oz), flan (1/2 cup) DB: sugar free flan / pudding.

Bedtime Snack: Milk or Yogurt (8oz), cookies (3).

Note: 1 cup of coffee, tea or water served with all meals.
Beans/Legumes can be used for variation. (Black, Kidney, Navy, Chickpeas, Lentils, Lima Beans, Split Pea, etc...)
DB = For diabetics: Follow portion sizes, Use skim milk. Use sugar substitute, sugar free beverages, fruit juices, with no added sugar and fruit in own juice.
No added salt: follow the regular meal plan. Omit salt and substitute salted meats with another roasted meat. No canned soups and no salted crackers.
Low Fat / Cholesterol: Use skim milk, lean meats, baked, broiled or boiled, light mayonnaise, light margarine's, low fat desserts or fruit.
